Everything is pasteurized. This makes kimchi shelf-stable – no need for refrigeration. It leaves the kimchi with very few nutrients.
Half the kimchi is pasteurized to extend the shelf life, which means only 50% of the whole content is raw. This kills the naturally occurring probiotics.
Artificial preservatives, including nitrates, may be added. Some preservatives kill probiotics and can be harmful to your body

2. Open the jar to ‘burp’ the kimchi and put it in the fridge.
Carbon dioxide is a natural byproduct of fermentation and sometimes it builds up in the jar. This is a good thing because it means our kimchi is alive!
3. Add 2-3 Tablespoons of Baechu Kimchi to your meal.
